Pickled Beets from Anne’s Garden

I have a weakness for pickled beets.  Pickled beets were a constant in my house.  They could always be found in the back of the fridge, in a Cool Whip container, loaded with vinegar and onions.  While not as vinegary as the beets from my youth, these beets are superb.  They’re sweet and tasty and were gone in less than a day.  The beets were tender, and while I usually prefer to have them sliced, these were all whole.  Fishing them out of the brine was a delight and I was disappointed when I finally ran out.  Fortunately, I’m the only person in the house that really cares for beets, so I had them all to myself.

Ingredients: beets, sugar, vinegar, salt.
